Sparkling wines were the drinks of the highest class for centuries, but are popular everywhere nowadays. Their popularity grew especially after WW2. In two decades after it, the global production of sparkling wine quadrupled and is still growing today.
One of the main grape varieties in sparkling wine production is pinot noir, a red variety. The inside of the grape is similar to white grape. When the juice is extracted, it looks like white wine, yellowish in colour. Only during a phase called maceration, the end wine turns red. It is a paradox that the most superior, bright and clear sparkling wine is made from red grapes.
One bottle of sparkling wine contains about 44 million little bubbles.
Many people use the word “Champagne” for all bubbly wines, when that is actually just a typical French wine from the Champagne region. Similarly, “Vins Moussex” is the name for French sparkling wine that was not made in this region. Spumante is Italian sparkling wine, sekt is German, cava Spanish. In Slovenia, we call high quality and premium sparkling wine with appelation d'origine controllé, made in Slovenia, penina.
